Thai Red Curry Chicken
Ingredients: 2-3 tbsp oil 2 1/2- 3tbsp red curry paste 1/2 cup thai basil, chopped 1 onion, diced 1 stalk lemongrass 1 red pepper, diced 2 carrots, sliced 1 can baby corn 1 can coconut milk 1/2 cup chicken broth(optional) 1 tbsp grated ginger 2 cloves garlic, grated 1 tbsp lime juice 2-3 tbsp brown sugar 2 tbsp fish sauce salt TT thai chilis if you want more heat this dish ended up being a hit with my family. there was a nice balance between spice, sweetness and sour. *NOTE: bake at 350 for 45-60 minutes rather than at 350.
